Cranberry Date Buttermilk Muffins

Ingredients
  

  • 3/4 cup all-purpose flour
  • 3/4 cup oat flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 egg
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1/2 cup dried cranberries
  • 1/2 cup date crumbles
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix together flours, salt, baking powder, and baking soda. Set aside.
  • Whisk liquid ingredients with sugar until thoroughly mixed and there are lots of bubbles.
  • Add dry ingredients to wet ingredients and mix until just combined.
  • Fold in dried cranberries, date crumbles, and chopped walnuts.
  • Divide batter evenly among greased or lined muffin cups.
  • Bake for about 20 minutes.
