Preheat oven to 350 degrees.
Mix together flours, salt, baking powder, and baking soda. Set aside.
Whisk liquid ingredients with sugar until thoroughly mixed and there are lots of bubbles.
Add dry ingredients to wet ingredients and mix until just combined.
Fold in dried cranberries, date crumbles, and chopped walnuts.
Divide batter evenly among greased or lined muffin cups.
Bake for about 20 minutes.
