Chicken Noodle Soup with Spinach

- 1 tbsp organic vegetable oil
- 3 garlic cloves, minced
- 8 cups organic, low-sodium chicken broth
- 2 chicken breasts, cooked and shredded
- 15 oz. package organic baby spinach
- 1 cup julienned carrots
- 112 oz. package Pennsylvania Dutch 100% Whole Grain Wide Ribbon Noodles
- ¼ tsp freshly ground pepper
- ¼ tsp nutmeg
- Kosher or sea salt, to taste
- Heat oil in a large saucepan over medium-high heat. Add carrots and garlic. Cook for about 3 minutes, stirring continuously.
- Add broth, pepper, and nutmeg. Bring to a boil.
- Add noodles and cook, uncovered, for 5 minutes.
- Add chicken and spinach. Let simmer for another 2 minutes.
