Mini Carrot Bread Recipe

Ingredients
  • 1 cup carrots
  • 1 cup sugar
  • 2 eggs
  • ¾ cup vegetable oil
  • 1½ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ c chopped walnuts or pecans
Instructions
  1. Preheat oven to 350 degrees, and grease a mini loaf pan.
  2. Cream sugar, eggs, and oil.
  3. Sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Add wet and dry ingredients, and mix in the carrots and nuts.
  5. Bake for 25-30 minutes, or until your toothpick comes outclean.
