Yesterday was National Peanut Butter Lover’s Day, and being a HUGE fan of peanut butter, I thought it would be a good excuse to bake–and I’m always looking for an excuse to bake! Why am I doing this a day late? Today is when I had time to get the baking done, and a special peanut butter event is just too important to miss.
So, today I have a recipe for some delicious and easy to make Honey Peanut Butter Cookies in honor of National Peanut Butter Lover’s Day + 1. I hope you enjoy them!
Honey Peanut Butter Cookies

Serves: 4 dozen
Ingredients
- 1 egg, beaten
- ½ cup butter
- ½ cup brown sugar
- ½ cup honey
- ½ tsp salt (up to 1 tsp if your peanut butter is unsalted)
- ½ cup peanut butter
- 2 cups flour
- ½ tsp baking soda
Instructions
- Preheat oven to 350°
- Cream together butter, brown sugar, and honey until light and fluffy
- Add beaten egg and mix well
- Mix in peanut butter and salt
- Sift together flour and baking soda; add to mixture
- Mix thoroughly
- Roll dough into little balls and place on a parchment paper lined cookie sheet
- Use the tines of a fork to flatten each ball and create those familiar criss cross marks
